VARIETY: 100% Syrah 

SOIL: Chalky-Clay

VINIFICATION: grapes of selected clones are picked up at dawn, and cold macerated in a protected area for 6-8 hrs.
After a soft pressing, keeping it away from the oxygen like in all other operations.
Fermentation starts immediately with the introduction of selected yeasts in steel tanks at 16°C.
Once all the sugar has been consumed, the temperature is lowered fast for 24-36 hrs. right before the first tank transfer.

AGING: cement tanks on noble lees for 2 months, then aging is completed by 2 more months, at least, in the bottle.

TASTING NOTES: At a first view, a kaleidoscopic composition of reflections in the glass, pink purple fuchsia, and red geranium.
The first lively impact at the nose, a bouquet of flowers opens gradually into an explosion of berries.
The fruity note is more greedy as time passes. The finish is clearly of raspberries, tinged by hints of unusual herbaceousness, reminding of tomato leafs.
Notes of mango, savory and sweet, keeps the mouth clean, fragrant and never saturated.

PAIRINGS: all of the Mediterranean dishes, whether based on seafood, fish, vegetables or cheeses.
Fantastic as a predinner, or with a pistachio semifreddo after dinner.

SERVING TEMPERATURE:12°C.
