Chardonnay
Organic Wine - Costa Etrusco Romana - IGT


VARIETY: 100% Chardonnay

SOIL: sandy-loam.

VINIFICATION: Grapes are harvested at dawn and after a brief enzymic maceration at 8-10°C, followed by a soft pressing and cold static clarification.
Fermentation use selected cryogenic yeasts at a temperature below 16°C, until sugar has been consumed after 10-15 days. Remaining period on the lees in controlled conditions lasts for 30 days. Until racking.

AGING: Cement tanks then 3 month in the bottle.

TASTING NOTES: color is straw yellow with a lite greenish nuances.
Nose impact is intense, fruity and floreal. A clear fragrancy of pineapple mixed with hawthorn, iris and peach blossoms.
Balanced in the palate. Good fullness and a clear minerality, the residual of sugar enhances the smoothness and keeps acidity and salinity in perfect harmony, and gives a warm perception in the palate.
Fruity and floral finish are perceived by the nose, and leaves a very little bitterness that cleans perfectly the mouth.

PAIRING: good as an appetizer, matches with pasta with seafood, cheese pie, vegetables and cold cuts. Perfect with white meat.

SERVING TEMPERATURE:12°C.

SIZE: 75cl.
